Inventive Snacks

I love the experience and taste of Spanish Tapas with a cold beer mid afternoon or the delight of tasting a new seed, nut or vegetable cooked fresh in a foreign market. I recall the first time I tasted freshly fried plantain chips in Cochin, India: the taste sensation and delight still inspires me to this day to make the perfect snack recipe.

I originally launched six inventive nut recipes using fantastic natural ingredients such as locally foraged wild garlic, Dorset honey and locally churned butter. They truly are a taste sensation and my nuts are crafted using my unique hot air roasting process, rather than the usual and much less healthy method of deep fat frying. They taste fresh and so different - everyone falls in love with them the first time they try them, particularly my Kasbah Spiced Almonds which are made with my own recipe of harissa and fresh mint.

Each of my snack recipes are inspired by my travels or by recipe books left to me by my Uncle Archibald. He was a great traveller and enthusiastic natural historian. He was always overseas but at Christmas he'd send me seeds or plants to grow, or the most unusual foods to try.

My latest creation is my hot air roasted Impeccable Peanuts. Available in three flavours to match the profiles of the others, I offer Sea Salt & Herb, Sweet Chilli & Mango and Tangy Tomato.
